Modica is a town in Sicily rich in art and history. It has been declared cultural patrimony by UNESCO. It is famous for its chocolate, unique in its genre. Its peculiarity compared to the others is cold processing. This one does not include neither conching, nor the use of added materials, such as vegetable fats, milk, and lecithin. This working process is originated from Aztecs, and it was brought to Sicily by Spanish people in XVI century. At the moment there are no traces of this process in Spain, nor in America, nor in other parts of the world. Modica is the sole mark of it.
